Chicken recipe; Chicken Escalopes with Mushrooms (Scaloppine di Pollo Con Funghi)

Chicken Escalopes with mushrooms is a recipe i lent to cook in Italy. It is a delicious italian family meal and also recomended for get together parties. Chicken escalopes is easy to prepare and won't empty your pocket to shop for it's ingredients.

Here are the ingredients needed;

Skinless and boneless Chicken breast (beef can also be used instead)
Mushrooms
White wine
3 tsp of butter
2tsp of olive oil(optional)
1 tsp of flour
Fresh rosemary with sage (leaves)
Green olives sliced (Optional)
1 Garlic (sliced or in bulb)
Chopped Parsley
Salt
Nutmeg (Optional)

Pepper

Preparation; 

- Clean and wash mushrooms in cold water to get dirt and sand off.

- Then slice the chicken breast in flat parts and coat with black peper (or red pepper) sage from fresh rosemary, grate in a small amount of nutmeg and flour.

- In a pan, add olive oil, add garlic let it heat then remove garlic and sliced mushrooms. - -- When mushrooms start to melt add wine and let evaporate for a couple of minutes
 - Then add chopped parsley, salt and cook for 10minutes if sauce thickens during cooking, add vegetable of chicken stock.

- Then in another pan sauté in 2tsp of butter add 1tsp of oil so it melts without burning and add the coated chicken in medium heat to cook chicken soft.

-  Let Chicken get brown and add sliced onion and half cup of white wine let cook for about 15mins if sauce thickens during cooking add more white wine then add mushrooms and olives and cook for 5-7mins.

Ready to serve.
It is a light meal and good for the winter period.
